At FABB Academy of Coffee, a good education program is the sum of its parts and is the result of a long-term, collaborative effort of an international community of coffee industry experts and professionals.

As such, we are proud to offer – Coffee Skills Program – that can be segmented into the following specialties:

1. Introduction to Coffee

Get to know the origins of coffee. Follow its humble beginnings in Ethiopia and learn how it became one of the most sought-after commodity today. In this module, you will also learn about important techniques, such as growing the cherries, brewing, roasting, grading, and more. Not only that, you will have a better grasp of the value chain of coffee once you have finished this module.

2. Barista Skills (Foundation, Intermediate & Professional)

Want to be the best behind the espresso bar? Then, the Barista Skills Module is just what you are looking for. Learn everything you need to know about the grinder as well as about latte art and milk techniques. You will also have a better understanding of customer service, basic coffee business practices, and health and safety procedures.

3. Brewing (Foundation, Intermediate & Professional)

There are numerous ways to brew coffee and you will learn all about them in this module. Lessons are hands-on so you will definitely know how to make quality coffee. Coffee strength measurements, grind profiles, coffee extraction charting, and brewing methods – learn all of these today!

4. Green Coffee (Foundation, Intermediate & Professional)

In this module, we will teach you all about the important concepts involving green coffee. You will learn its production, processing, and grading. Then, you will understand how green coffee is shipped, stored, and processed at its destination. You will even learn about coffee contracts and portfolio management!

5. Roasting (Foundation, Intermediate & Professional)

Learn about roast cycles, roast levels, defect identification, and more. By the end of the lessons, you will have a better understanding of the whole roasting process, including the physical changes that happen to beans at each stage of the cycle. On top of that, we will teach you about lean production and work space management to become an even more efficient barista.

6. Sensory Skills (Foundation, Intermediate & Professional)

Sensory skills are important to a barista. These affect the way we taste coffee and how we evaluate its characteristics. Through this module, you will acquire knowledge on how to use your sensory skills better. Be able to conduct practical and interactive sensory evaluation.

3 LEVELS

Earn 100 points in total to acquire the SCA coffee skills diploma. Here are the points you will earn per level:

Foundation: 5 Points

The Foundation Level is all about giving you an introduction to the world of coffee. You need not have any previous experience to join this level. Courses under the Foundation Level often take 1 day to complete.

Intermediate: 10 Points

Want to know more about the coffee industry and be a part of it? The Intermediate Level will provide you the knowledge and skills to do so. A bit of experience working in the field is advisable for this level. Expect that Intermediate modules often take a minimum of 2 days to complete.

Professional: 25 Points

If you want to acquire specialist knowledge and skills in the coffee industry, then the Professional Level is best for you. By successfully completing modules under this level, you will have proven yourself to be highly competent to work in the field. It is recommended that you have extensive working experience prior to joining Professional courses. You also need to possess Intermediate qualifications. Courses under this level often take 3 days or more.
